There are two main technologies used by inkjet printer manufacturers. These are Thermal Bubble and Piezo Electric.
Thermal Bubble printing (also known as 'BubbleJet') is used by manufacturers such as Canon and Hewlett Packard. This is where a tiny heating element is used to heat the ink in a nozzle. This causes a bubble to form and then burst. When it bursts, ink is sprayed onto the paper forming a tiny dot.
Piezo Electric printing technology was patented by Epson. Here a tiny crystal in each print nozzle has an electrical charge applied to it which makes it bend. When the electricity is removed, it bends back and ink is forced out of the nozzle and onto the page.
